Baking in the City

This weekend a friend of mine from Caledon ventured to the big city for a weekend of shopping, movies, and of course, baking!!

After a big day of shopping and a big night of Medieval Times, we slept late on Sunday and figured we needed to make an epic breakfast.

Pancakes and bacon were the first to spring to mind, but we had to spice it up a little!

 

Instead of plain pancakes or even just chocolate chip pancakes, we decided to go all out. We had Chocolate Chips, White Chocolate Chips, Peanut Butter Chips, Mini Peanut Butter Cups and Skor Chips all mixed in the batter. Ambitious? Maybe. Delicious? Definitely.

I even considered throwing some bacon into the pancakes, but we figured that was a bit much.

 

Candy Pancakes and Bacon. Breakfast of champions! The pancakes were so delicious. We spread raspberry jam on top, which was really good with the chocolate!

 

After breakfast we lay on the sofa in food comas watching movies, until we got peckish. When you have Candy Pancakes for breakfast, it’s important to follow up with an equally fantastic lunch.

Having made Strawberry Cheesecake Bites last weekend, I had some cheesecake filling leftover that needed to get used. We decided to make Chocolate Brownie cupcakes and use the leftover frosting to ice them.

 

We whipped up some brownie batter, spooned it into mini cupcakes tins, and stuck a piece of Lindt milk chocolate in the centre.

 

Those are good lookin’ Brownie Bites!

 

We added White Chocolate to the existing Cream Cheese frosting, and piped it onto the Brownie Bites.

 

Because these are mini, you can eat a ton of them and they don’t count.

 

After we finished frosting the bites, we STILL had some frosting left so this one got an extra helping! Looks more like an ice cream cone than a cupcake…

    lol…. because they`re small they dont count…. i`ll apply that rule to everything from now on.
