S’more Cupcakes

Well, these were certainly more effort than just making regular old S’mores… But at least they’ll be all ready to go this weekend by the campfire!

I started with my favourite chocolate batter, and spooned a small amount into the bottom of the cups. Then I cut large marshmallows in half and placed them in the centre.

I covered up the marshmallows with more batter, and topped it all off with graham cracker crumbs mixed with brown sugar and butter. Yum!

Some of the marshmallow spilled out while baking in the oven, so a few of the cupcakes are going to be very difficult to get out of their wrappers!

Finally I topped the cupcakes with thick chocolate fudge icing, sprinkled them with some graham cracker crumbs, and added graham cracker and marshmallow garnishes.

They smell reeeeaaaaally good, I’m excited to try one.
